Alessandro Pavoni
Executive Chef
Alessandro began his career in Brescia, in Italy’s north, and then worked in various Michelin star venues such as La Rotonde in France and the two Michelin starred Villa Fiordaliso on Lake Garda, Alessandro broadened his culinary horizons working in Bermuda at the famous Restaurant Lido before moving to Sydney permanently in 2003.
He assumed the role of Executive Chef at the Park Hyatt in 2005. In 2009, Alessandro’s dream of owning his own restaurant became a reality with two-hatted Ormeggio at The Spit.
Alessandro is both Chef and accomplished Restaurateur with a number of other venues. Since 2014 Chiosco By Ormeggio, a seaside trattoria; a’Mare, a two-hat classic fine dining experience showcasing elegant table side service which opened at Crown in Barangaroo in 2020; and coming later this year will be Postino Osteria, a classic neighbourhood osteria in Summer Hill, and Cibaria Manly on Manly’s beachfront, a celebration of all great things Italian!

Bill Drakopoulos
Restaurateur
With forty years experience in the hospitality industry, Bill has combined his expert knowledge of restaurant operations with his passion for customer service to undertake his business ventures.
Bill has encapsulated the essence of Sydney dining with each of his venues boasting magnificent water views.

Bill independently owns Sydney Restaurant Group, some of Sydney's premier waterfront venues.
His relationship with Ormeggio began in early 2013.
Victor Moya
Executive Chef
Victor’s career as a chef has seen him work in some of Europe and the world’s best restaurants. After completing his technical qualification in Spain in 2001, Victor focused his work experience in gastronomic restaurants all over Spain. He went on to work in three Michelin star restaurants including, Restaurante Martín Berasategui and Restaurante El Celler de Can Roca, as well as working with three Michelin star Chef, Pedro Subijana.

Many years in Michelin starred venues such as two Michelin star Restaurant t’Zilte in Belgium, the acclaimed Spanish Michelin starred Paco Morales and Roman three Michelin star, “La Pergola” with celebrated chef Heinz Beck.

He joined Ormeggio at The Spit in Sydney in 2011 and in 2014 stepped up as Head Chef and Co-Owner. In 2020 Victor took on the role of Executive Chef.
Andrea Rezzi
Chef
Roman born Italian Chef Andrea completed his chef studies in Italy and worked in London with the famous Tuscan Frescobaldi family. This was a wonderful opportunity for Andrea to both explore his fine yet traditional Italian cooking, as well as excite him with the challenges of opening a new restaurant, learning a new language and experiencing a new culture. What a learning ground indeed. He moved on to Sardinia, in the famed Cala di Volpe hotel, the very same as Alessandro Pavoni’s experience, and onwards to various restaurants and hotels throughout Italy and London.
Andrea joined the Chiosco by Ormeggio team in 2021 and we were proud to have him begin his first foray into leading a team as Chef.

In 2024 Andrea stepped into the Chef role of our flagship Italian seafood fine-diner, Ormeggio at The Spit. It is exciting for Andrea to lean into his seafood skills, and continue to take inspiration from his Italian roots, albeit in a more contemporary and precise format. In his time at Chiosco he developed a loyal following of fans with his skills, technique, knowledge, and overall ‘Italian-ness’. He proved himself as not only a great cook but also an ambitious, creative, and reliable chef with a passion for his work. Andrea is a welcome addition to the Ormeggio Team.
Jan-Broder Timm
Restaurant Manager
Introducing Jan-Broder Timm, Ormeggio’s new Restaurant Manager 2023.

Having worked in multiple Michelin star venues in Europe, Jan arrived in Australia in 2016 looking for his next experience in the unique casual fine-dining scene in Sydney. With his skills, experience, wine knowledge, and passion for the industry he enjoyed great career success since then, and fortunately for us chose to stay here! Working in Sydney and hearing guests and food critics refer to a great lunch or dinner as an ‘experience' rather than just a ‘meal’ profoundly affected Jan and brought a completely different aspect to how he viewed the hospitality profession.

You might recognise his face from his stint with our friends at Pilu at Freshwater, or from other iconic venues such as Park Hyatt Sydney and Cottage Point Inn.

Jan has joined Ormeggio as Restaurant Manager in 2023.
